Preparation
Cut the duck into large pieces. Chop the onion and tomatoes. Crush the garlic cloves.
Brown the duck in oil over medium-high heat.
Add the onion, garlic, and tomatoes. Cook until softened and the juices begin to reduce.
Stir in the herbs and olives.
Pour in the white wine to moisten.
Season with salt and pepper to taste.
Simmer for 1h30 over low heat until tender.
