Vegan Christmas:that's how it tastes without meat

Less than two weeks until Christmas is finally here. Above all, one thing should not be missing:a successful party with lots of goodies. Traditionally, most people have meat on the table during the holiday season. But what if the guests or a family member eats purely plant-based?

Don't panic:if you're wondering what a vegan dinner looks like, here's a delicious last-minute recipe that can be on the table in less than an hour.

The vegan Christmas bowl combines red cabbage and mashed potatoes with delicious nut crunch and Bimi broccoli marinated for Christmas. Served with lamb's lettuce, cranberries and chestnuts, this main course is an eye-catcher on any Christmas table – and is in no way inferior to the turkey.

Vegan Christmas bowl with red cabbage, mashed potatoes, Bimi broccoli and nut crunch

Ready in 50 minutes

Ingredients for 2 bowls:

1 pack of Bimi broccoli
2 tbsp canola oil
2 tbsp maple syrup
1 teaspoon gingerbread spice
1/2 teaspoon cinnamon
Salt and pepper

For the mashed potatoes:

500 g potatoes
50 ml oat cream
50 g margarine
some nutmeg
Salt and pepper

For the red cabbage salad:

500 grams of red cabbage
3 tbsp white wine vinegar
1 tbsp maple syrup
2 tbsp canola oil
Salt and pepper

For the nut crunch:

100 g mixed nuts (e.g. walnuts, Brazil nuts, sunflower seeds)
2 tbsp canola oil
1/2 teaspoon cinnamon
1 tbsp maple syrup

Toppings at will:

vegan gravy
chestnuts
Cranberries
Lamb's lettuce

Preparation:

Preheat the oven to 180°C. Boil the potatoes for about 20 minutes. Then drain the water and add the margarine, oat cream, nutmeg and salt and pepper. Puree everything to a puree.
Blanch the Bimi broccoli in boiling water for 2 minutes and then place them on a baking tray lined with baking paper.
Mix all ingredients for the marinade and brush the Bimi broccoli with a pastry brush. Place the Bimi broccoli in the oven for about 15 minutes.
Chop the red cabbage very finely and put in a large bowl with the rest of the ingredients. Knead the salad very firmly with your hands (rubber gloves are fine!).
For the nut crunch, roughly chop the nuts and mix with the rest of the ingredients in a small bowl. Put everything in a pan and roast for about 2 – 3 minutes until the nuts turn light brown. Let the nut crunch cool briefly.
Arrange all ingredients in two large bowls and choose toppings as you wish.
