With the sun shining brightly, nothing beats a chilled granita to kick off summer. At Brooks Amsterdam, this citrus-gin granita draws from Sicilian tradition—pair it with brioche for breakfast, alongside fresh oysters for an elegant amuse-bouche, or in a prosecco glass as dessert.
Ingredients
350 g fresh lime or lemon juice
150 g gin
150 g water
150 g sugar
Preparation time: 4 hours and 10 minutes
- Combine sugar and water in a saucepan over medium-high heat. Bring to a boil until sugar fully dissolves. Remove from heat, pour into a bowl, cool for 10 minutes, then refrigerate.
- Squeeze fresh lime or lemon juice right away—citrus loses its vibrant flavor after 30 minutes.
- Pour cooled sugar syrup into the citrus juice. Stir thoroughly and cover with plastic wrap.
- Refrigerate, stirring with a fork every hour. It's ready after 3-4 hours when firm and icy.
