Tiramisu: A Timeless Gourmet Icon

Ingredients

  • 5 eggs
  • 40 grams flour
  • 30 grams soluble coffee
  • 20 grams Marsala
  • 50 grams sugar
  • 100 grams brown sugar
  • 250 grams mascarpone
  • 1 ristretto
  • Icing sugar
  • 25 grams water

Preparation Steps

1st step: Prepare the biscuits

Beat 2 egg whites, then add 10 grams sugar and beat again until stiff.

In a separate bowl, whisk 40 grams sugar with 2 egg yolks until pale and creamy. Gently fold in the egg whites with a spatula. Sift in the flour and fold until incorporated.

Transfer to a piping bag and pipe the mixture into flexible silicone molds to form boudoir biscuits. Dust with icing sugar. Bake at 170°C for 10 minutes.

While baking, mix the coffee, water, Marsala, and ristretto in a shallow dish for dipping the biscuits later.

2nd step: Make the mascarpone cream

Whisk 3 egg yolks with the brown sugar until light and fluffy. Add mascarpone and mix until smooth.

Beat 3 egg whites with a little sugar to stiff peaks, then gently fold into the mascarpone mixture with a spatula.

3rd step: Assemble

In a cake mold, layer mascarpone cream followed by coffee-dipped biscuits. Repeat until the mold is full, ending with cream. Refrigerate for 6 hours. Dust with cocoa powder before serving. Enjoy!
