As we embrace the warmth of Indian summer, I've partnered with Schär to create this inviting autumn brunch menu. Ideal for relaxed weekends with loved ones, it balances sweet and savory flavors—all gluten- and lactose-free.
I crafted fluffy pancakes using Schär's Mix Pâtisserie – Mix C flour, elegant smoked trout toasts on their seeded country bread, and paired them with Cereal Rusks topped with dairy-free Nocciolata or vegetable margarine.
For a cozy tablescape, I selected SEMA Design crockery, trays, cups, and saucers in warm, powdery autumn tones. Captured beautifully by photographer Matthieu Hoarau.

Ingredients
– 2 egg yolks
– 50 g Schär Mix Pâtisserie flour
– 150 g rice flour
– 50 g organic cane sugar
– 40 cl rice milk
– 60 g vegetable butter
– 1 vanilla bean
– 1 sachet organic baking powder
– Pinch of salt
Accompaniments
– Dried fruits, coconut powder, maple syrup
Drinks
– Organic orange juice, Natura Fusion Tea
Steps
1. In a bowl, whisk rice milk and egg yolks. Add rice flour and Schär pastry mix flour. Incorporate sugar, baking powder, vanilla, melted vegetable butter, and salt for a smooth batter. Refrigerate for 20 minutes.
2. Heat olive oil in a pan. Add small ladles of batter. Cook 2 minutes per side over low heat until bubbles form.
3. Serve with dried fruits, coconut, and maple syrup.
4. Pair with Cereal Rusks and dairy-free Nocciolata.

– Sprouted alfalfa & arugula (vinaigrette: olive oil, salt, cumin, lemon)

Steps
1. Arrange bread slices on a baking sheet.
2. Spread rice cream, top with trout, herbs, and olive oil.
3. Bake 5 minutes.
4. Serve with Cereal Rusks and vegetable butter.
