Gluten-Free and Lactose-Free Smoked Trout Rolled Pancakes
Ingredients (Serves 2)
- 50 g rice flour
- 35 g buckwheat flour
- 1 egg
- 15 cl rice milk
- 10 g vegetable margarine
- 1 tomato
- 2 spring onions
- 100 g shredded vegan cheese
- 200 g silken tofu
- 4 tablespoons chopped chives
- 4 slices Ovive smoked trout
- 20 cl rice cream
- 1 squeeze lemon juice
- 1 jar Ovive trout eggs
Preparation Steps
- Melt the vegetable margarine in a saucepan until it turns hazelnut-colored, then cool. In a bowl, whisk rice flour, buckwheat flour, and rice milk. Add beaten egg, cooled margarine, and salt. Rest dough 30 minutes, then cook pancakes.
- Wash and quarter the tomato, remove seeds, and dice finely. Trim and slice spring onions thinly.
- In a bowl, combine tomatoes, onions, vegan cheese, silken tofu, and chives. Season with salt and pepper.
- Spread filling on a pancake, top with Ovive smoked trout slice, and roll tightly.
