Smoked Salmon Fritters with Espelette Pepper: Chef Hubert's Quick Recipe

Ingredients (25 pieces):
  • 250 g smoked salmon
  • 250 g flour (type 55)
  • 8 g baking powder
  • 3 g Espelette pepper
  • Chives
  • Flat-leaf parsley
  • 18 g garlic

Difficulty: Beginner (Level 1)

Finely chop the smoked salmon, herbs, and garlic. Mix the salmon with flour and baking powder. Stir in the garlic, Espelette pepper, and chopped herbs to form a batter.

Scoop small portions into hot oil in a fryer. Fry until golden, drain on paper towels, and keep warm. Serve on lettuce leaves.
