Orzo with broccoli from slow cooker

First of all, I must confess that the dish is not entirely my own, I was inspired by an orzo dish from Hellofresh. That looked so good that I wondered if I could make it in the slow cooker too. In addition, I have very few vegetarian slow cooker recipes and I think that's a shame. I like to eat vegetarian, just to contribute to sustainable living and to limit my footprint. In addition, it can also be very tasty. And this dish certainly is!

Ingredients orzo with broccoli and chestnut mushrooms

This recipe with broccoli in the slow cooker is sufficient for a family of 4 people, we actually even had a portion left.

  • 2 broccoli heads
  • 3 outings
  • 1 cup chestnut mushrooms
  • 250 grams orzo
  • 300 ml vegetable stock
  • 4 cloves of garlic
  • 150 grams of grated cheese (I just grated mature cheese, but of course you can also buy a bag of ready-made grated cheese)
  • pine nuts
  • 2 tablespoons lemon juice
  • teaspoon thyme
  • salt and pepper

How to prepare orzo with broccoli from the slow cooker

  • Cut the broccoli into small stalks
  • Slice the chestnut mushrooms
  • Chop the onions and press the garlic cloves

  • Mix the lemon with the thyme and garlic

  • Put the broccoli in the slow cooker and add the chopped onion, chestnut mushrooms, lemon juice mixture and stock
  • Add some salt and pepper
  • Put the slow cooker on low for 4 hours

  • After these 4 hours, add the orzo and grated cheese and set the slow cooker on low for another hour
  • After that, it can stay warm in the keep warm position
  • Just before serving, toast some pine nuts in the pan over a low heat and sprinkle them on the plate over the food
  • Enjoy your meal!

You can also add the orzo and grated cheese to the broccoli in the slow cooker at the beginning. I personally prefer to do this later, so that the orzo doesn't get too sticky, but that's up to everyone's own choice of course.

Preparation orzo with broccoli in the pan

  • Cut the broccoli into small stalks
  • Slice the chestnut mushrooms
  • Chop the onions and press the garlic cloves
  • Cook the vegetable stock
  • Mix the lemon with the thyme
  • Cook the broccoli in a pan with plenty of water until al dente in about 8 minutes
  • Fry the onion with the garlic in a little oil in a wok
  • Add the chestnut mushrooms and lemon juice mixture
  • Add the orzo, fry a little longer
  • Fill up with the vegetable stock and let it simmer for 10 minutes, if it becomes too dry in the meantime, add some extra stock/water
  • Stir the broccoli through the orzo and half of the cheese
  • Toast the pine nuts over a low heat in the pan
  • Your orzo is ready to serve, sprinkle the pine nuts and the remaining bit of cheese on the plate over the orzo
  • Enjoy your meal!

We enjoyed it deliciously, even with the children the plate was so empty. In the original recipe, a different cheese is used, but to get it a little better suited to the taste of the children, I replaced it with the regular cheese.
