Slow Cooker Chicken Thigh Fillets with Vegetables and Soy Sauce

With a handful of simple ingredients, you can set it and forget it. Prep in the morning, and enjoy a hearty, delicious meal when you get home.

Ingredients for Slow Cooker Chicken Thigh Fillets

  • Roots
  • Green beans
  • 2 Potatoes
  • Onion or spring onion
  • 3 cloves Garlic
  • Chicken thigh fillet
  • Herbs (massala curry, chili flakes, thyme, galangal and oriental chicken spices)
  • 2 tablespoons tomato paste
  • Soy sauce

Adjust quantities to suit your family's size, just like any home-cooked meal.

How to Prepare Slow Cooker Chicken Thigh Fillets with Vegetables

  • Clean and cut the chicken thigh fillet into pieces
  • Cut the onion into pieces and fry it in the pan with the crushed garlic
  • Add the chicken thigh fillet and let it fry for a while
  • While cutting the carrot and green beans into pieces (not too big)
  • Peel the potato and cut it into pieces
  • Make a marinade from the tomato puree, the soy sauce (you can also add the soy marinade) and the herbs you like
  • Add the marinade to the chicken
  • Keep baking for a while
  • Put the vegetables in the slow cooker
  • The chicken thigh fillet can now also be used in the slow cooker
  • Stir briefly
  • About 5-6 hours on low
  • Enjoy your meal

It's that simple. Pre-searing the chicken, as Annemieke did, helps pieces stay intact, but it's optional. For speed, add raw chicken straight to the cooker—it may just break down a bit more.
