Last week, I received a vegetable box from Fresh Harvest, complete with... Brussels sprouts. My husband loves them, but plain boiled? Not my favorite. Fried with garlic, herbs, and bacon is tolerable, but I wanted something better. That's how this fresh Brussels sprouts stew was born—a game-changer for skeptics like me.

Ingredients (Serves 4-6)

  • 1 kilo of potatoes
  • 750 grams of Brussels sprouts
  • 3 tablespoons witch's cheese
  • 1 tablespoon stock powder
  • pinch of curry
  • 2 apples (elstar)
  • milk
  • chives

How to Make Brussels Sprouts Stew with Apple

Peel the potatoes (or boil in skins, or use pre-peeled). Boil for 15 minutes, then add cleaned Brussels sprouts and cook another 10 minutes.

Meanwhile, peel and dice the apples.

Drain the potatoes and sprouts. Mash together with a pestle. Stir in stock powder, milk, witch's cheese, chives, curry, and apple pieces. Add milk as needed for a creamy texture.

Done! The witch's cheese and apples add a refreshing lightness, balancing the richness. We paired it with homemade hash, but smoked sausage works great too.
