Traditional shawarma on pita often misses the health mark—unless you make it yourself! Start with homemade whole wheat pita (recipe), season chicken (or chickpeas for vegan shawarma) with this blend, and you've got a winner.

For the healthiest version: Toss the spices with chicken thigh fillets and mushrooms, serve over mixed greens with tomato, cucumber, and a dressing of extra virgin olive oil and lemon juice. It's low-carb, protein-packed, and veggie-rich.

Recipe for Homemade Shawarma Seasoning

Sufficient for 1kg of meat (scale up if you love heat).

What Do You Need?

  • 1 teaspoon dried parsley
  • 1 teaspoon ginger powder (djahee)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin seeds (djinten)
  • 1 teaspoon coriander (ketumbar)
  • 1 teaspoon paprika powder
  • 1 teaspoon allspice
  • 1 teaspoon celery leaf
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon turmeric (curcuma)
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • (measuring) spoons

How to Make It

Combine all ingredients. For finer texture, grind in a coffee grinder or mortar. Store in an airtight jar. Enjoy!
