Boost cinnamon to compensate for reduced sugar – it adds warmth and sweetness you'll barely miss.

  • 1 pack frozen puff pastry (enough for 10 pieces)
  • 2-3 apples (we love Elstar)
  • 2 teaspoons ground cinnamon
  • 2 tablespoons sugar
  • 1 egg

Step-by-Step: How to Make Apple Turnovers

  • Remove puff pastry from packaging and thaw for 10 minutes. No longer, or it'll get too soft and tricky to handle.
  • Preheat oven to 200°C.
  • Peel and chop apples into small pieces – smaller is better for easy filling. (I learned my lesson cutting mine too large!)
  • Mix sugar and cinnamon, then toss with apples.
  • Beat the egg and brush dough squares with it using a silicone brush for even coverage.
