Yet, research published in March 2017 in Food Quality and Preference reveals that cup size and thickness significantly shape our taste perception—much like the glass affects wine.

Small Cups Enhance Bitterness and Intensity

In a rigorous experiment, 300 participants from China, Colombia, and the United Kingdom evaluated the aroma, bitterness, intensity, temperature, caffeine level, and sweetness of various coffees. They also indicated willingness-to-pay based on cup appearance. Consistently, coffee in small, narrow cups was rated more bitter, intense, and aromatic. Larger, wider cups yielded milder perceptions. UK and Colombian tasters valued the larger-cup coffees more highly, while Chinese participants saw equal value regardless of size.
