At least as tasty:dressings without oil

Still drowning that healthy salad in oil? Shame. These dressings are without oil, a lot slimmer and at least as tasty.

Is your salad as light as you think?

Salads are the ideal food if you want to lose weight or eat plant-based. However, there is a pitfall:the extra ingredients, such as croutons and cheese and of course the dressing are all high in calories. Especially in restaurants, all kinds of things are often added to salads to make them extra tasty, so that they are not as light as you think.

An easy way to cut calories in your salads is to take a closer look at your dressings. You are probably used to using a lot of mayonnaise or olive oil. Olive oil in itself is not unhealthy, because it contains good fats. But it remains fat and contains little to no vitamins and minerals. Two tablespoons of olive oil will give you about 240 calories in no time. Fortunately, it is perfectly possible to make tasty dressings without oil. Yes, even the classic dressings such as vinaigrette and balsamic dressing. And you can even make a creamy dressing without oil:ingredients such as tofu, beans, nuts or avocado give the desired creamy texture.

Classic balsamic dressing

Preparation time 10 minutes

  • 2 tsp water
  • 1 tsp Dijon mustard
  • 1 tsp nutritional yeast flakes
  • ¼ tsp dried basil (or other dried herbs)

Blend the ingredients until smooth. Taste and season with some salt or pepper.

More oil-free dressings can be found in the June issue of Santé, which is now available.
