As a seasoned home cook, I swear by this delicious pepper, ham, and onion omelette for busy weeknights. It's quick, balanced, and leaves you time to unwind.
This simple dish delivers a nutritious meal without hours in the kitchen, perfect for evenings when you want good food fast.
- 6 fresh eggs
- 1/2 red bell pepper
- 1 thick slice of white ham
- 1/2 onion
- 1 tablespoon of olive oil
Dice the half pepper and ham into small cubes, then slice the onion into thin strips. In a large bowl, crack and beat the eggs until smooth.
Heat olive oil in a frying pan and sauté the peppers and onions until browned. (Butter works great too if you prefer.) Add the browned veggies and diced ham to the eggs, mixing well for even distribution.
In the same pan, add a touch more oil or butter and pour in the egg mixture. Cover and cook on low heat for 5 minutes.
Once the omelette is mostly set, flip it and cook the other side until golden brown. Serve hot – I love pairing it with a simple green salad for the perfect side.
Light yet satisfying, this omelette avoids heavy evening meals for better sleep. For 4 servings, it costs just €5.25: €3 for eggs, €0.95 for the pepper, €1 for ham, and €0.30 for the onion. (I always stock olive oil at home.)
Feed the family affordably, save time, and enjoy. Have you tried this omelette? Share your thoughts in the comments!
