Frozen watermelon, the summer dessert by Dominique Ansel

Known for the cronut (mixture of croissant and donut), his colorful churros, his blooming hot chocolate or his cookie shots (milk served in a small glass made of biscuit), Dominique Ansel, the best known French pastry chef in New York, has just released its new summer delicacy, which is a hit. This time, watermelon is at the heart of his menu with the "What-a-melon Soft Serve", which is made of a hollowed-out slice of watermelon filled with watermelon-flavoured ice cream and sprinkled with chocolate chips to make seeds, a pinch of salt and a pinch of lime juice. Dominique Ansel has it all figured out! In addition to being the fruit of summer (watermelon is everywhere), the dessert combines freshness and a little sweet touch brought by chocolate. It's all you need to spend the summer cool and post beautiful photos on Instagram.

To reproduce at home

The pastry chef is not at his first attempt with fruity desserts. He recently offered his customers a "kiwi sorbert bar", a kind of frozen dessert resembling a kiwi, with vanilla ice cream in the center, surrounded by poppy seeds to look like pips, with chocolate covered kiwi sorbet with a velvety texture to imitate the hairy skin of the kiwi. Unfortunately, the talented pastry chef only sells his desserts in the United States and Tokyo, but you can always take inspiration from his Instagram account and try to reproduce them here. Thanks Dominique Ansel for the ideas!
