Make your own Brussels sprout stew with apple

Last week I received a box full of vegetables from Fresh Harvest. With… eeeuuuwww… Brussels sprouts. Husband really likes Brussels sprouts but I'm not really a fan of them. Fried in the garlic and lots of added herbs and bacon, it's still OK, but just cooked? In principle, you don't make me happy with that.

So I started thinking about how to prepare the Brussels sprouts in a way that would please me as well. And that's what created this fresh Brussels sprout stew.

Ingredients of the Brussels sprout stew (4-6 persons)

  • 1 kilo of potatoes
  • 750 grams of Brussels sprouts
  • 3 tablespoons witch's cheese
  • 1 tablespoon stock powder
  • pinch of curry
  • 2 apples (elstar)
  • milk
  • chives

This is how you make the Brussels sprout stew with apple

Peel the potatoes, or boil them in their skins, or buy them peeled. What you want . Boil the potatoes for 15 minutes and then add the cleaned Brussels sprouts. Cook for another 10 minutes.

In the meantime, peel the apples and cut them into small cubes.

Drain the potatoes and Brussels sprouts. Take the pestle and mash the Brussels sprouts and potatoes together. Add the stock powder, the milk, the witch's cheese, the chives, the curry and the apple pieces and mash for a while. Add as much milk as needed to make the stew a little creamy.

And you are done! Making Brussels sprouts stew is that easy.

The witch's cheese and the apple provide a nice freshness to the stew, so that the cost is not too heavy. We have combined the Brussels sprouts stew with homemade hash, but it will certainly taste good with a delicious smoked sausage.

Variation tip:Add a chopped bell pepper to the stew, or nice hard-fried bacon.
