Preheat your oven to 240°C (thermostat 8).
In a large bowl, whisk together the flour, baking powder, white sugar, brown sugar, salt, and vanilla sugar.
In a separate bowl, beat the egg with the melted butter.
Combine the wet and dry mixtures until just incorporated.
Fold in chocolate chips or your favorite add-ins like almonds or oats. Mix gently.
Scoop dough onto a parchment-lined baking sheet in 5-6 cm mounds. Bake for 10 minutes.
Cool on the sheet for a few minutes before transferring to a wire rack.
