Seasonal fruit papillote, orange coulis and mint steam

Preparation:

Prepare the fruit. Peel them. Cut the pomelo and kiwis into slices, the strawberries into quarters. Leave the raspberries whole.

Evenly distribute the fruit on each half of the aluminum foil. Add 2 sprigs of mint per foil. Sprinkle lightly with sugar. close hermetically by pinching the edges.

Bake for 5 minutes in the oven preheated to 200°C (th.6/7).

Mix the carefully washed but unpeeled oranges with the lemon juice, water and sugar (15 g). Filter the resulting coulis and set aside to cool.

Open the papillote and cover it with this coulis.
