As renowned Chef Hubert shares, start by preparing the batter for 20 small pancakes. Place the sifted flour in a bowl and create a well in the center. Add a pinch of salt and the eggs, then whisk while gradually incorporating the milk. Stir in the melted butter and beer. Mix thoroughly and let the batter rest for 2 hours.
Cook the pancakes in a blinis pan and arrange them on a work surface.
Blanch the tied chives in boiling water for 1 minute 30 seconds, then drain.
In the center of each pancake, add 5 g of fresh cream and 4 strips of sea urchin. (To extract the strips, open the urchins, rinse under running water, and scoop gently with a small spoon.)
Tie the pancakes closed using the chives as delicate strings.
Place on a baking sheet and bake at th.5 for 3 minutes.
Arrange on 4 plates and serve piping hot.
