Fresh Pasta with Mussels: Authentic Recipe from a Seasoned Chef

  • 6 very ripe tomatoes
  • 3 garlic cloves
  • 1 bouquet garni
  • 250 g fresh pasta
  • 12 basil leaves
  • 5 tablespoons olive oil
  • Salt and ground pepper, to taste

As a chef with over 20 years specializing in Mediterranean seafood dishes, I love this classic: tender mussels in a vibrant tomato sauce infused with garlic and fresh basil, tossed with al dente fresh pasta for an irresistible meal.

Clean the mussels thoroughly by brushing, rinsing, and removing the beards. Peel the tomatoes, cut into pieces, and roughly chop the pulp; reserve the juice. Peel and finely chop the garlic. Heat 4 tablespoons olive oil in a large pan. Add tomatoes with their juice, garlic, bouquet garni, pepper, and simmer uncovered for 10 minutes.

Add mussels and cook over high heat for 10 minutes until they open. Remove opened mussels, shell them, and keep warm. Discard any that remain closed.

Bring a large pot of salted water to a boil with 1 tablespoon olive oil. Add pasta and cook for 3-5 minutes until al dente.

Meanwhile, reduce the tomato sauce over high heat. Finely chop basil and stir in. Season lightly with salt and pepper. Warm serving dishes.

Drain pasta thoroughly and transfer to hot serving dish. Add shelled mussels, pour tomato-basil sauce over top (discard bouquet garni), toss quickly, and serve immediately.
