Authentic Pimientos del Piquillo Stuffed with Serrano Ham
- 16 whole Pimientos del Piquillo
- 150 g minced pork
- 70 g Serrano ham, chopped
- 3 eggs
- 1 chopped onion
- 2 cloves garlic, minced and degermed
- 10 cl olive oil
- Salt and ground pepper

- Heat a little olive oil in a pan and sauté the garlic and onion until browned.
- Add the minced pork and chopped Serrano ham.
- Stir in 1 beaten egg and allow it to set, mixing thoroughly.
- Season with salt and freshly ground pepper.
- Gently drain the peppers, open them, and stuff each with a small spoonful of the mixture.
- Dip the stuffed peppers in flour, then in the remaining 2 beaten eggs.
- Fry on each side in the remaining hot olive oil until golden.
- Serve with lettuce leaves and diced tomatoes.
