Authentic Pimientos del Piquillo Stuffed with Serrano Ham

Ingredients (Serves 4):
  • 16 whole Pimientos del Piquillo
  • 150 g minced pork
  • 70 g Serrano ham, chopped
  • 3 eggs
  • 1 chopped onion
  • 2 cloves garlic, minced and degermed
  • 10 cl olive oil
  • Salt and ground pepper
Preparation:

  1. Heat a little olive oil in a pan and sauté the garlic and onion until browned.
  2. Add the minced pork and chopped Serrano ham.
  3. Stir in 1 beaten egg and allow it to set, mixing thoroughly.
  4. Season with salt and freshly ground pepper.
  5. Gently drain the peppers, open them, and stuff each with a small spoonful of the mixture.
  6. Dip the stuffed peppers in flour, then in the remaining 2 beaten eggs.
  7. Fry on each side in the remaining hot olive oil until golden.
  8. Serve with lettuce leaves and diced tomatoes.
