
Mojo Verde, or Green Mojo, is a vibrant Canarian sauce traditionally served with fish cooked in court-bouillon or fried. This recipe draws from authentic island culinary traditions.
Ingredients: 5 cloves of garlic, 1 green sweet pepper, 1/2 cup of olive oil, 1 dash of wine vinegar, sea salt.
Crush the peeled garlic and sea salt together in a mortar until smooth.
Add the green chili, cut into small pieces with seeds removed, and continue pounding into a paste.
Gradually incorporate the olive oil and wine vinegar, mixing thoroughly for a silky emulsion.
For extra freshness, incorporate chopped parsley or cilantro directly into the mortar.
