Healthy Fat-Free Stuffed Tomatoes Recipe – Easy Oven-Baked Delight for 6

Ingredients for 6 servings

  • 12 large ripe tomatoes
  • 500 g pork/veal mince
  • 1 large onion
  • 1 or 2 cloves of garlic
  • 1 bunch of parsley
  • 1 glass of rice
  • salt, pepper

Instructions

  1. Cut the tops off the tomatoes and scoop out the insides slightly. Reserve the tomato pulp.
  2. Pour the glass of rice into the bottom of a baking dish. Arrange the prepared tomatoes on top and drizzle some reserved tomato juice over the rice.
  3. Finely chop the parsley, garlic, onion, and scooped-out tomato pieces. Mix with the pork/veal mince. Season with salt and pepper.
  4. Stuff the tomatoes with the mixture, then replace the tops.
  5. Bake in a preheated oven at 180°C for 45 minutes.
