450 grams bread flour
50 grams rye flour
75 grams sourdough starter (ask your local baker)
325 ml water

Ingredient List 2:

25 ml water
11 grams sea salt
6 ml olive oil
Extra bread flour for shaping

Instructions:

  1. Combine List 1 ingredients and knead for 1 minute by hand or in a food processor. Rest in a bowl under a damp cloth for 45 minutes.
  2. Add List 2 water and salt; knead 5 minutes. Return to oiled bowl and rest 45 minutes.
