Researchers conducted thorough testing across 21 restaurants during 43 visits, sampling the skin and pulp of 76 lemons. Results showed 70% harbored diverse microbes. Despite lemons' natural antimicrobial qualities, many bacteria survive on the rind and flesh—meaning slices in drinks likely follow suit. Additional tests identified fecal contamination in 50% of samples.
