What Is Gluten?
As explained by the Dutch Celiac Association, a trusted authority on celiac disease and gluten sensitivity: 'Gluten is a protein that occurs naturally in wheat, rye, barley, spelt, and khorasan wheat. It’s also present in products made from these grains, such as bread, crackers, pizza, pasta, breadcrumbs, biscuits, cake, and pie. Gluten often hides in unexpected places, like soups (as binders, vermicelli, or in meat), sauces, some sweets, ice creams, and beer. Oats are frequently cross-contaminated and thus not reliably safe for gluten-free diets.'
