Ingredients for Sweet Charlotte (Serves 8)

Gather 2-3 packets of ladyfingers (based on mold size), 500 ml full-cream liquid whipping cream, 2 sachets whipped cream stabilizer (or equivalent gelatin sheets), 30 g icing sugar, 150 ml soaking liquid (light syrup, fruit juice, or alcohol), and fresh or frozen fruit—or chocolate. For chocolate charlotte, swap the cream and stabilizer for 3 egg whites.

The Basic Recipe

A true charlotte features soaked ladyfingers, a light mousse or whipped cream filling, and customizable garnish. For fruit versions, whip the cream to stiff peaks, fold in stabilizer and icing sugar, then flavor with fruit coulis or similar. Chocolate charlotte calls for a rich mousse: whip 3 egg whites to stiff peaks and gently fold in melted chocolate.

Assembling the Charlotte

Quickly dip ladyfingers in your soaking liquid. Line the mold's bottom and sides tightly, avoiding gaps. Pipe a layer of mousse or cream, add chopped fresh fruit (omit for chocolate), then another ladyfinger layer. Repeat, ending with ladyfingers. Chill for several hours, unmold carefully, and decorate with fruit or chocolate shavings for a stunning finish.
