The Best Pastry Chef:Here's how to make Mercotte's famous "Earth Cake"!

Obviously this Earth Cake could only be a layer cake (Layer cake for English speakers) because the Blue Planet is, as we know, structured in crust, mantle and core; a geological model that inspired Mercotte for the first episode of season 9 of Meilleur Pâtissier on M6 broadcast this Wednesday, September 30.
The pastry chef from Savoie who for her traditional test therefore immediately picked up the candidates with this very (very) technical achievement. So if they did averagely overall, you may be good at making this cake that is as delicious as it is Instagrammable, let's face it. Here's how!

How to make Mercotte Earth Cake?


INGREDIENTS

  • 4 eggs
  • 330 g of butter
  • 300 g of sugar
  • 265 g of flour
  • 1 packet of baking powder
  • 120 g ground almonds
  • 1 teaspoon of almond extract
  • 1 sachet of white buttercream (you can also make it homemade)
  • Gel food coloring:red, yellow, green and blue

Materials needed:

  • 1 silicone half-sphere cake mold like this one.
  • 1 aluminum half-sphere cake mold 20 cm like this one.
  • 1 angled spatula likethis one.
  • 1 piping bag likethis one.

PREPARATION

  • Preheat your oven to 180°C / Thermostat 6.
  • In a bowl, mix together the flour, ground almonds and baking powder.
  • Using a mixer, cream the sugar and butter until the mixture is frothy.
  • Add the eggs to the mixture. Add the almond extract.
  • Gradually stir the dry flour mixture into the wet ingredients. Mix until you get a homogeneous mixture
  • Put 1/3 of the dough in another container, add a few drops of yellow coloring.
  • Add a few drops of coloring
  • Pour the "yellow" batter into the silicone mold almost to the top.
  • Bake for about 30 minutes. Wait 10 minutes before unmolding and allowing to cool completely on a wire rack. Lay the cakes flat and trim off excess edges with a knife
  • Grease the ball molds with coconut oil or neutral oil. Pour the red batter to 3/4. Using a spoon, make a well in the center and place the yellow half-sphere cakes in the middle to form the core. Bake for 45 minutes then cool completely.
  • Even the cakes with a knife. Put a thin layer of frosting on a cake and spread it evenly. Place the other sphere on the cake.For decoration:
  • Divide the rest of your buttercream frosting in half. Color the first blue. Completely cover the cake with the angled spatula.
  • Create texture by lightly dabbing the icing with the tip of the spatula.
  • Color the rest of the icing green and place it in a piping bag fitted with a #1 tip. Trace the contours of the continents all over the cake before filling them. It's up to you and bon appetit of course!
