Renowned food blogger Sandra from Leukrecepten.nl shares her expertise in the September issue of Santé magazine. She discusses her healthy lifestyle and debuts her new cookbook. Here, we bring you two standout recipes straight from her collection.

Vegetarian Beet Lasagna with Walnuts

Main course for 4 servings

Prep time: 35 minutes | Bake time: 40 minutes

Ricotta sauce ingredients: 50 g butter or margarine • 60 g flour • 500 ml milk • 250 g ricotta • pinch of thyme.

Lasagna ingredients: 1 kg cooked whole beets • 75 g walnuts • 12 lasagna sheets • 1 egg • handful of grated cheese.

Equipment: Large baking dish

Instructions: Preheat oven to 180°C. Start with the ricotta sauce: Melt butter in a saucepan, stir in flour, and cook roux for 3 minutes. Gradually whisk in milk until smooth. Add ricotta, season with salt, pepper, and thyme. For the lasagna, slice beets into 0.5-1 cm pieces and layer in the baking dish. Top with sauce, crumbled walnuts, and lasagna sheets. Repeat layers, ending with beets. Mix egg into remaining sauce, pour over top, sprinkle with cheese and extra nuts. Bake 40 minutes.

Tip: Swap ricotta for blue cheese and add pear slices for a twist.

Tuna Poke Bowl

Main course for 2 bowls

Prep time: 45 minutes + marinating

Marinade ingredients: 1 garlic clove • 4 tbsp soy sauce • 3 tbsp mirin • pinch chili flakes • 3 tbsp honey or agave syrup • 2 tbsp sesame oil • juice of 1 lime.

Poke bowl ingredients: 200 g sushi rice • 3 tbsp sushi vinegar • 200 g raw tuna • 5 radishes • 100 g edamame beans • 100 g wakame seaweed salad • ½ mango, diced • 50 g julienned carrots • 1 tsp sesame seeds • 1 lime, sliced.

Instructions: Crush garlic and simmer marinade ingredients (except sesame oil and lime) for 15-20 minutes. Cool, discard garlic, then add oil and lime juice. Cook sushi rice per package, stir in vinegar, and rest 15 minutes. Cube tuna, marinate 15 minutes to overnight. Assemble bowls with rice in center, surrounded by toppings. Drizzle with extra marinade, garnish with sesame seeds and lime.
