Contrary to popular belief, homemade foie gras is not very difficult to prepare! Here is a traditional and easy recipe to prepare at home for Christmas. First, buy a nice raw, fresh or frozen foie gras. Soak it in lukewarm salted water for 1 hour then remove the nerves using a small knife. Salt, pepper, add the spices of your choice and a small dose of alcohol to give it taste. Put in a terrine and cook in a bain-marie for 35 minutes at 120°C. Leave to cool then refrigerate. Serve your homemade foie gras on small toasts of sandwich bread or gingerbread.

As a dish, make way for the traditional Christmas turkey recipe

Another traditional and essential Christmas recipe:turkey. Opt for a turkey of about 3 kg for 8 people, and prepare a stuffing with sausage meat, bread crumbs soaked in milk, chestnuts and herbs (thyme, parsley, etc.). Season with salt and pepper and add a small amount of alcohol if desired. Stuff your turkey with this preparation, oil it and sprinkle it with broth. Cook the turkey for about 3 or 5 hours, increasing the temperature every hour:thermostat 4 then thermostat 5/6 then thermostat 7. Serve with small vegetables or potatoes.
