Recipe for a Christmas burger with bacon, mango chutney and chestnuts

A Christmas dinner without stress, with this delicious burger from Simone's Kitchen you should succeed.

Ingredients
– 400 grams of minced beef
– 100 grams of chestnuts
– Four slices of bacon
– 50 grams of cooked ham, diced
– 1 egg
– Little breadcrumbs
– Pepper
– Salt
– Lettuce
– 4 hamburger buns

For the chutney
– 1 onion, thinly sliced
– 1 tablespoon sunflower oil
– 2 large ripe mangoes
– 2 ripe pears
– 1 teaspoon chili flakes
– 2 cm ginger root
– 1 teaspoon ginger powder
– ½ teaspoon cardamom
– ½ teaspoon cumin
– ½ teaspoon coriander
– ½ teaspoon turmeric
– 1 teaspoon cinnamon
– 200 grams light brown sugar
– ½ teaspoon salt
– 200 milliliters red wine vinegar

Preparation method
Make the chutney first. Heat the oil in a large pan and fry the onion until soft and translucent. Meanwhile, peel the mango and pears and cut them into small pieces. Add all spices, ginger and chilli flakes to the onion and stir until fragrant. Add the pears, sugar and about 100 milliliters of water to the onion. Let it cook until the pears soften a bit. Add the mango, red wine vinegar and a dash of salt. Let it simmer until it has the desired thickness. Keep in mind that it will thicken a bit as you cool it. Store the chutney in sterilized jars in a dark place until needed.

Then you make the burger. Cut crosswise into the chestnuts on the convex side with a sharp knife. Boil them for about three minutes, drain and peel while they are still warm. Also remove the brown fuzzy inside. Cut the chestnuts into small pieces. Put the ground beef, chopped chestnuts, egg, breadcrumbs, pepper, salt and ham together in a bowl and knead well. If it is still too wet, you can add some breadcrumbs. Form four burgers from your mixture. Gently fry the burgers in a frying pan. Meanwhile, fry the bacon slices until brown and crispy. Let it drain on kitchen paper. To prepare the burger, start with a layer of sauce, followed by the lettuce and then the burger. Top the burger with the mango chutney and crumble the bacon over it. Serve the burgers with some extra chutney.
