Burger Ingredients
– 400 grams minced beef
– 100 grams chestnuts
– 4 slices bacon
– 50 grams cooked ham, diced
– 1 egg
– Few breadcrumbs
– Pepper
– Salt
– Lettuce
– 4 hamburger buns
Mango Chutney Ingredients
– 1 onion, thinly sliced
– 1 tablespoon sunflower oil
– 2 large ripe mangoes
– 2 ripe pears
– 1 teaspoon chili flakes
– 2 cm fresh ginger root
– 1 teaspoon ginger powder
– ½ teaspoon cardamom
– ½ teaspoon cumin
– ½ teaspoon coriander
– ½ teaspoon turmeric
– 1 teaspoon cinnamon
– 200 grams light brown sugar
– ½ teaspoon salt
– 200 milliliters red wine vinegar
Instructions
Start with the chutney: Heat the oil in a large pan and sauté the onion until soft and translucent. Peel and dice the mangoes and pears. Add all spices, fresh ginger, and chili flakes to the onion, stirring until fragrant. Add pears, sugar, and 100 ml water. Simmer until pears soften. Stir in mango, vinegar, and salt. Cook down to desired thickness—it will thicken more as it cools. Store in sterilized jars in a cool, dark place.
Prepare the burgers: Score chestnuts on the convex side, boil 3 minutes, drain, peel while warm, and remove any fuzzy skins. Chop finely. Mix ground beef, chestnuts, egg, breadcrumbs, seasoning, and ham. Add more breadcrumbs if needed. Shape into 4 patties. Fry gently until cooked. Crisp bacon separately and drain on paper towels.
Assemble: Spread sauce on buns, add lettuce, burger patty, mango chutney, and crumbled bacon. Serve with extra chutney.
