Instructions
Cook the soba noodles according to package directions. Drain and set aside. In a pot, bring the vegetable stock to a boil. Slice the shiitake mushrooms and thinly strip the chard leaves. Season the stock with soy sauce. Add the mushrooms and chard, simmering for 5 minutes until tender-crisp. Warm the noodles in the soup for 1 minute. Divide into wide bowls and serve immediately.
