My Roasted Apples


Ingredients:4 people
  • Apples (Royal-Gala)
    8
  • Sugar syrup at 29°B (so much sugar/water)
    35 cl
  • semi-salted butter
    80 g
  • cinnamon powder
    1 level tablespoon
  • brown sugar
    150 g
  • Mirabelle plum (or apricot) jam
    100 g
  • four spices
    2 pinches
  • Espelette pepper
    1 pinch


Preparation:
  • Preparation time:25 minutes
  • Cooking time:40 minutes


Wash the apples and remove the center using an apple corer or with a paring knife (pips).

Prepare the syrup by boiling the water and caster sugar, then let cool.

Place the apples in an ovenproof dish, preheat it to 150°C.

Fill the holes in the apples with the brown sugar, drizzle with the syrup, and over the sugar in the holes add a small knob of semi-salted butter. Sprinkle with the spices.

Put in the oven for about 40 minutes (slow cooking) while basting with juice from time to time.

Out of the oven, fill the holes with mirabelle plum jam.

Put back in the oven for a few minutes.

Serve warm.
