Soak the gelatin sheets in a bowl of cold water until softened.
Blend 800g of washed and hulled strawberries with 100g sugar and the juice of 1/2 lemon to make a smooth coulis. Warm 2 tablespoons of this coulis in a saucepan over low heat, then whisk in the drained gelatin until fully dissolved.
Off the heat, stir in half of the strawberry coulis (reserve the other half in an airtight container in the fridge for decoration). Fold in the very cold liquid cream whipped to firm peaks, followed by the remaining strawberries cut into pieces.
Butter the bottom and sides of a charlotte mold and line with plastic wrap. Pour in the strawberry mousse and refrigerate for at least 4 hours.
Carefully unmold the charlotte and remove the plastic wrap. Arrange Russian cigarettes vertically around the sides and horizontally on top, pressing gently to adhere.
Drizzle a few spoonfuls of reserved strawberry coulis over the top, allowing it to drip between the biscuits. Serve the remaining coulis in a sauceboat alongside.
