Wash the kumquats, cut them in half lengthwise, and place in a saucepan with 60 cl water and the sugar. Cook over low heat for 25 minutes. After this time, add the verbena, turn off the heat, and let cool.
Arrange the cleaned, halved Mara des Bois strawberries in a large bowl. Pour over the cooled kumquats with their juices and verbena leaves. Add a few turns of the white pepper mill.
Marinate in the fridge for at least 4 hours.
Serve chilled in individual cups.
