From years of foraging experience, the Hairy Coprin is a superb edible when young and fresh. However, it turns toxic rapidly as it blackens. Harvest only "closed cap" specimens that are entirely white, with no pink, purple, or gray at the base. Cook immediately after picking, and never reheat any leftovers.
Hairy Coprin Recipe
Select pristine white coprins, discard the stems, and slice the caps into rings. Finely chop the fresh tarragon.
Crush the hard-boiled eggs thoroughly, then blend with olive oil, lemon juice, salt, and pepper.
Drizzle this sauce over the sliced coprins and serve right away.
