Preparation
Peel and finely chop the onion and garlic clove. In a saucepan, sauté the onions in a little olive oil over low heat until softened.
Meanwhile, bring salted water to a boil and blanch the zucchini for about 10 minutes.
Add the minced meat and garlic to the onions, browning the meat. Stir in the cumin, pine nuts, and herbs. Season with salt and pepper to taste.
Drain the zucchini, cut off the tops, and scoop out the flesh. Mix the flesh with the meat mixture and stuff the zucchini. Replace the tops and place in a baking dish.
Bake in the oven at 180°C (thermostat 6) for about 30 minutes.
Serve hot for a delicious family meal.
