Rêgis Flagel's Recipe: Revisited Crêpe Suzette with Tangerines

Ingredients:

In addition to O11ze's fresh crepes, you'll need (for 6 crepes):

  • 100 g semi-salted butter(#doesnotsupportthebeurredoux)
  • 150g icing sugar
  • 6 tangerines
  • 2 lemons
  • A little Grand Marnier*

Preparation:

  • Squeeze the tangerines and lemons.
  • Prepare a syrup: caramelize the sugar in a heated pan, then add the tangerine and lemon juice.
  • Over low heat, once you have a light caramel, melt the salted butter in the pan.
  • Flambe with a spoonful of Grand Marnier.
  • Reheat your fresh crepe in the pan: heat each side for 1-2 minutes in the sauce.
  • Serve with a scoop of Madagascar vanilla ice cream (and a bowl of cider*).

Brittany native Rêgis Flagel founded O11ze crêperies, opening the first in 2013 at 11 Place de la Liberté in La Garenne-Colombes.
