Ingredients

  • 3 Zespri kiwifruit
  • 2 ripe bananas
  • 150 gr oatmeal
  • 100 gr flour
  • 2 tablespoons grated coconut (+ some extra to decorate)
  • 4 medjool dates
  • 50 gr chopped walnuts
  • 3 eggs
  • 1.5 tsp baking powder
  • 1 tsp cinnamon
  • pinch of salt

Preparation Method

  1. Preheat the oven to 180 degrees.
  2. Blend the bananas with the pitted dates.
  3. Fold in the oats, flour, walnuts, eggs, coconut, baking powder, cinnamon, and salt using a spatula to form a sticky batter.
  4. Dice one and a half kiwis and gently mix into the batter.
  5. Slice the remaining kiwis into thin rounds.
  6. Line a rectangular baking pan with parchment paper and lightly grease the sides.
  7. Arrange the kiwi slices on the parchment, then pour the batter over them.
  8. Bake for about 40 minutes.
  9. Cool slightly, then carefully invert onto a plate so the kiwis crown the top. Sprinkle with extra grated coconut for a finishing touch.
