Ingredients
- 3 Zespri kiwifruit
- 2 ripe bananas
- 150 gr oatmeal
- 100 gr flour
- 2 tablespoons grated coconut (+ some extra to decorate)
- 4 medjool dates
- 50 gr chopped walnuts
- 3 eggs
- 1.5 tsp baking powder
- 1 tsp cinnamon
- pinch of salt

Preparation Method
- Preheat the oven to 180 degrees.
- Blend the bananas with the pitted dates.
- Fold in the oats, flour, walnuts, eggs, coconut, baking powder, cinnamon, and salt using a spatula to form a sticky batter.
- Dice one and a half kiwis and gently mix into the batter.
- Slice the remaining kiwis into thin rounds.
- Line a rectangular baking pan with parchment paper and lightly grease the sides.
- Arrange the kiwi slices on the parchment, then pour the batter over them.
- Bake for about 40 minutes.
- Cool slightly, then carefully invert onto a plate so the kiwis crown the top. Sprinkle with extra grated coconut for a finishing touch.
