Margriet Spijksma s Food Diary: A Soul Trainer s Simple, Balanced Approach to Eating

Margriet Spijksma, acclaimed soul trainer, speaker, and author, shares her lifestyle insights in the March issue of Santé. Here's an exclusive look at her everyday food diary, revealing a straightforward path to wellness without rigid rules.

"Cooking isn't a big thing for me—it's not my passion. I'm fortunate that my mother-in-law often drops off home-cooked meals. I don't obsess over my diet, but I rarely indulge in sweets. Chips and toast? Almost never. I can't finish a whole slice of cake these days. Fifteen or twenty years ago, I was insatiable with a massive sweet tooth and no limits. Those extra kilos felt like an emotional 'coat' for protection—something I no longer need."

Food Diary

Breakfast

"I start with water and vitamin tablets, followed by tea and a bowl of Greek yogurt topped with muesli, raspberries, blueberries, two kiwis—which keep my gums inflammation-free—and a banana."

Lunch

"I typically have three or four sandwiches, almost always with peanut butter. Sometimes I add honey on top—pure bliss. For variety, I'll switch to chicken breast or cheese. When lunching with a friend, I opt for a goat cheese salad. I absolutely love it."

Dinner

"I rarely cook myself—my wonderful mother-in-law loves it and frequently brings dishes like nasi, stamppot, or baked potatoes with meat and veggies. Weekends often feature Thai curry, pizza, or tapas delivered. I enjoy a glass of wine then, but skip desserts and ice cream almost entirely."

In Between

"I work until four, arriving home hungry. Then it's cashews, walnuts, or a rice cake with toppings. Occasionally a candy. I sip coffee in the morning and after dinner, plus plenty of water, tea, or Optimel."
