Chicago's Garvey Food Court is a classic American hub of fast-food outlets loaded with unhealthy options. Entrepreneur Luke Saunders recognized a prime opportunity to change that.
Fresh, organic, and recyclable
Amid the greasy eateries, he introduced the Farmer's Fridge. Swap XXL burgers for vibrant salads packed with kale, strawberries, or quinoa. Ingredients are organic, sourced mainly from local farmers, and the machine itself is 80% recyclable.
The rise of healthy vending machines
Luke's idea was born from personal frustration—as a frequent business traveler, he was stunned by the lack of nutritious grab-and-go food. The pilot program is thriving, with more machines planned for 2014.
