Crispy King Prawn Tempura Recipe with Eggplant and Zucchini

Ingredients (Serves 4)
  • 4 large king prawns
  • 1 small eggplant
  • 1 zucchini
  • 1 large onion
  • Tempura batter (prepared)

  1. Prepare the tempura batter according to your trusted recipe.
  2. Remove the heads from the prawns and shell the tails, keeping them intact for that classic presentation.
  3. Peel the onion and slice into 1 cm thick rings.
  4. Wash and dry the eggplant and zucchini, then cut into 1/2 cm thick strips.
  5. Heat frying oil to 180°C.
  6. Dip the vegetables and prawns in the tempura batter, then fry in hot oil for 2-3 minutes, turning occasionally until golden.
  7. Drain on paper towels and serve immediately for maximum crispiness.
