Oregon State Researchers Discover Bacon-Flavored Seaweed: A Nutritious Vegan Alternative

Eating less meat—or going fully vegetarian or vegan—appeals to many, but replicating certain flavors like bacon can be challenging. Meat substitutes abound in organic stores, yet bacon's smoky essence remains elusive. Exciting news from Oregon State University researchers: they've identified a red alga that, when grilled, delivers an uncanny bacon taste while packing superior health benefits.

A Healthy, Nutrient-Dense Alternative

This discovery happened serendipitously. The team was cultivating the alga as a food source for sea snails (abalone), prized in Asian cuisine. Native to the Atlantic and Pacific coasts, this red seaweed outshines kale in nutrition, boasting high levels of protein, minerals, vitamins, and antioxidants. It's already popular in powdered form for smoothies, but fresh and fried? It mimics bacon remarkably.

Now, partnering with the university's Food Innovation Center, the researchers are developing algae-based products to potentially transform vegetarian and vegan markets. Stay tuned for updates!
