Ingredients
- 3 cod steaks
- 0.5 kg fresh broad beans
- 1.5 candied lemons
- 0.5 bunch chervil
- 3 tablespoons olive oil
- Salt and pepper from the mill
Preparation
- Wash and dry the chervil. Shell the broad beans and cook for 15 minutes in lightly salted boiling water. Cool, drain, and shell them. Cut the candied lemons into quarters.
- Combine the beans and lemon quarters in a pan. Season with salt and pepper. Drizzle with 2 tablespoons olive oil and warm gently over low heat.
- Heat 4 tablespoons olive oil in a sauté pan. Place the cod steaks skin-side down and cook for 10 minutes over medium heat, turning halfway. Season with salt and pepper.
