Pan-Seared Cod Steaks with Fresh Broad Beans and Candied Lemon: A Healthy Delight

Ingredients

  • 3 cod steaks
  • 0.5 kg fresh broad beans
  • 1.5 candied lemons
  • 0.5 bunch chervil
  • 3 tablespoons olive oil
  • Salt and pepper from the mill

Preparation

  1. Wash and dry the chervil. Shell the broad beans and cook for 15 minutes in lightly salted boiling water. Cool, drain, and shell them. Cut the candied lemons into quarters.
  2. Combine the beans and lemon quarters in a pan. Season with salt and pepper. Drizzle with 2 tablespoons olive oil and warm gently over low heat.
  3. Heat 4 tablespoons olive oil in a sauté pan. Place the cod steaks skin-side down and cook for 10 minutes over medium heat, turning halfway. Season with salt and pepper.
