How delicious does this sound?! Instead of steaming or boiling your chicken in water, you can also prepare it in coconut milk for a tasty and tender result. This is how you do it:
– Place the chicken breast in a medium saucepan and add enough coconut milk to submerge it about an inch or so.
– Put the lid on the pan, turn the heat up to high and make sure the coconut milk starts to boil.
– When the milk is boiling, turn the heat to medium-high and let the milk boil for 10 minutes.
– Remove the chicken from the pan and check the temperature with a thermometer. The ideal temperature is 75 degrees Celsius. When the temperature is lower, return the chicken to the milk and retest every 3 to 4 minutes until you reach 75 degrees.
– Let the chicken rest for 5 minutes before you cut it and use it in salads, sandwiches or rice dishes.
