Ingredients for 4 people

  • 500 g potatoes (Amandine or Bintje type)
  • 150 g of flour
  • 80 g of parmesan
  • 1 egg
  • Salt and pepper

How to

Preparation: 30 mins – Cooking: 15 mins

  1. Peel the potatoes and cook them for 10 minutes in a pot of boiling water.
  2. Drain and mash them with a fork.
  3. Add the egg yolk and grated parmesan to the mash. Season with salt and pepper.
  4. Incorporate the flour gradually until you form a non-sticky dough ball.
  5. Flour your work surface and roll the dough into a long, thin sausage.
  6. Cut into 1.5 cm pieces and roll them smooth between your palms.
  7. Press lightly with a fork to create ridges.
  8. Boil water in a saucepan and cook the gnocchi for 2-3 minutes. They're ready when they float to the surface!
