Elegant Chestnut Millefeuille: A Luxurious Layered Pastry Dessert
Ingredients (Serves 4)
- 12 discs of puff pastry (8 cm in diameter, baked for 10 minutes at 210°C)
- 20 cl milk
- 250 g chestnut cream
- A few mint leaves
- 2 vanilla cloves
- A few currant clusters
- 100 g coarsely grated dark chocolate
- 10 cl liquid whipped cream
- 1 tablespoon praline
- Gold leaf
- 8 candied chestnuts (including 4 chopped)
- 1 tablespoon maraschino
Preparation
- Preparation time: 30 minutes
- Cooking time: 10 minutes
Difficulty: Easy
- Mix the chestnut cream with half the chopped candied chestnuts, maraschino, liquid whipped cream, and half the praline.
- Sprinkle the baked puff pastry discs with icing sugar and neaten the edges with a hot skewer.
- Combine the boiled milk with the vanilla seeds and melted chocolate.
- Spread the chestnut cream mixture on each disc, then stack them in groups of three to form millefeuilles.
- On a serving plate, pour a little chocolate mixture, sprinkle with praline chips, and place a millefeuille in the center. Garnish with a mint leaf, a whole candied chestnut, a currant cluster, and gold leaf.
