Peel the pears, cut them in half, remove the cores, and slice each half into 3 wedges.
Melt the butter in a thick pie pan over medium heat. Sprinkle with sugar and let it lightly caramelize. Arrange the pear wedges in the bottom of the pan. Cook over medium heat for about 15 minutes, turning them halfway with a spatula.
Once well-colored, spread them evenly across the bottom, leaving a 5mm gap around the edge. Remove from heat and let cool slightly.
Preheat the oven to 210°C (gas mark 7). Unroll the puff pastry over the pears, press gently to adhere, then tuck the edges down around the pears using a fork handle. Bake for about 20 minutes until the pastry is golden brown.
Cool for 10 minutes, then carefully invert onto a larger serving dish. Serve warm with vanilla custard (or try a delicious green anise variation).
