Gourmet Prawn and Melon Medley with Three Distinct Mints
Ingredients (Serves 4)
- 1 yellow melon
- 1 Charentais melon
- A few peppermint leaves
- A few Spicata mint leaves
- A few Monarda mint (lemon balm) leaves
- 20 large cooked prawns
- 4 tablespoons Couri Cream Vinaigrette
Preparation Time: 25 minutes
Instructions
- Peel the melons and cut into thin strips.
- Shell the cooked prawns.
- Finely chop some of each of the three mints, reserving a few whole leaves.
- Artfully arrange alternating melon slices on plates.
- Top with prawns, chopped mint, and whole leaves.
- Serve the creamy curry vinaigrette on the side.
